Vegetable Lentil Soup

Description

The lentils provide protein and fiber to keep blood sugar stable. The veggies and healthy oil help prevent inflammation and fatigue of PCOS. What’s not to like about this hearty soup?

Ingredients

2 carrots, diced

2 celery sticks, diced

1 onion, diced

4 small red potatoes, cut into 1/2-inch cubes

1 garlic clove, minced

2 Tbsp vegetable oil

1 cup dry lentils

1 lb escarole (small head)

1 quart chicken broth

1-14 1/2 oz can Italian style stewed tomatoes, including liquid 

Directions

Heat oil in large pot over medium-high heat. Add diced carrots, celery and onion. Stirring occasionally, cook until tender.

Add garlic and continue to stir. Cook just until garlic is slightly browned. You don’t want to overcook the garlic.

Add the can of tomatoes (including their liquid), lentils, chicken broth, cubed potatoes and 3 cups water. As you stir to combine ingredients, break the tomatoes into pieces with the spoon.

Bring mixture to a boil and then reduce to a simmer on low heat. Cover and simmer for 50 minutes.

Meanwhile, cut the escarole into thin slices.

When soup is finished simmering, stir in the escarole and continue to cook and stir until escarole is wilted.
