Easy Taco Pasta
Description
Enjoy whole-grain pasta without worrying about sugar spikes. The high-protein beef and beans, along with healthy avocado fat, help prevent sugar spikes. The tomatoes and spices are so tasty, you won’t even think about their anti-inflammatory effects.
Ingredients
1 12-oz package whole-grain rotini
2 Tbsp olive oil
1 medium onion
2 garlic cloves
1 lb ground beef
1 1-oz packet taco seasoning
1 cup mild salsa
1 cup black beans, drained and rinsed
1 cup canned corn
1 cup cherry tomatoes
1 avocado
1/3 cup fresh cilantro
Lime juice
Directions
Dice the onion and mince the garlic cloves. Heat oil in a large pot at high heat. Add the onion, garlic and ground beef. Cook about 3 minute until beef is browned, breaking up the meat as it cooks.
Add taco seasoning and 1/2 cup water, stirring well to combine. Add 2 cups water, salsa and rotini. Stir, cover and cook 15 minutes.
Meanwhile, drain and rinse the black beans and canned corn. Dice the cherry tomatoes and slice the avocado. When the rotini reaches al dente, add the beans, corn, tomatoes and avocado. Stir to combine and serve topped with lime juice and cilantro.
