Sweet Potatoes in Ginger Syrup
Description
Both sweet potatoes and ginger provide anti-inflammatory benefits to those with IBS. Aside from this, sweet potatoes (particularly the orange variety) are rich in manganese, potassium and vitamins. Ginger, meanwhile, is already known for its gut-soothing properties. This snack is gentle on the gut and is only lightly sweetened.
Ingredients
2 medium orange sweet potatoes, peeled and cubed
3-inch ginger, peeled and crushed
¼ cup brown or muscovado sugar
5 cups water
Directions
1. Bring water to a boil over medium heat.
2. Add the crushed ginger and sweet potatoes. Simmer for 12-15 minutes.
3. Once the water starts boiling again, add sugar and boil until sugar dissolves.
