Healthy Sloppy Joes
Description
You can prevent PCOS symptoms and have your sloppy joes, too. From the high-protein lean beef to the healthy fats and phytonutrient-rich tomato sauce, the ingredients help prevent inflammation, fatigue and blood sugar spikes.
Ingredients
1 Tbsp coconut oil
1 medium onion
2 cloves garlic
1 pound lean ground beef
1 red bell pepper
8-oz can tomato sauce
4 Tbsp tomato paste
3 Tbsp maple syrup (optional)
1 Tbsp Worcestershire sauce
1 tsp mustard
1 Tbsp red wine vinegar
Directions
Dice the onion and red bell pepper and mince the garlic cloves. Heat coconut oil in a medium skillet over medium heat. Add the chopped onion and cook, stirring occasionally, until translucent. Add garlic and continue to cook and stir until garlic is fragrant and slightly browned.
Add ground beef and cook 5 more minutes or until there is no pink in the meat. Drain out the fat.
Place the cooked beef mixture in a 4-quart slow cooker. Add the diced red pepper, chicken broth, tomato sauce and paste, maple syrup (if using), Worcestershire sauce, mustard and vinegar. Stir to combine. Set the slow cooker to low heat and cook for 6-7 hours. Alternatively, you can cook at high heat for 3-4 hours.
Serve over whole-grain hamburger buns.
