Paleo Avocado Brownies

Description

At last, a brownie recipe that won’t trigger PCOS symptoms. Low-glycemic coconut sugar and healthy avocado fats will keep insulin levels stable and prevent cravings later on. Enjoy a rich, moist brownie without the guilt.

Ingredients

1 large avocado, mashed (about 1 cup)

1/2 teaspoon vanilla

4 Tablespoons cocoa powder

3 Tablespoons butter

2 eggs

1/2 cup sugar-free chocolate chips

3/4 cup almond flour

1/4 teaspoon baking soda

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup coconut sugar

Directions

Preheat oven to 350 F.

Line a 12” x 8” baking dish with parchment paper and set aside.

In a bowl, whisk together cocoa powder, flour, baking soda, baking powder, salt and coconut sugar.

Place mashed avocado in food processor. Process until smooth.

One ingredient at a time, add to a food processor vanilla, butter, cocoa powder, eggs and chocolate chips. Process a few seconds after each added ingredient.

Add flour, baking soda, baking powder, salt and coconut sugar and mix until thoroughly combined.

Pour batter into prepared baking dish and spread evenly. Bake for 30 minutes, until inserted toothpick comes out half clean. When finished baking, the top of the brownies will feel soft.

Let cool completely and cut into 12 servings.
