Gut-Friendly Pea-Mint Fritters

Description

Spelt flour or any type of gluten-free flour is used in this recipe to avoid inflammation. Full of complex carbohydrates and protein, frozen peas are easy to digest, so they’re gentle on the gut. Tahini or sesame seed paste is also well-tolerated since it is already in a highly digestible form.

Ingredients

3/4 cup organic spelt flour (or any gluten-free flour)

1½ tsp baking powder

2 cups organic frozen peas, thawed

Sprig of mint

1 tbsp parsley

2 tbsp organic Tahini

Olive oil

Directions

1. Put all ingredients in a food processor.

2. Blend mixture until it achieves a paste-like consistency.

3. Heal olive oil in pan over low heat (avoid burning the oil).

4. Place a tablespoon of the mixture and cook until lightly browned on each side (careful with the turning!). Serve warm and enjoy!
