Ingredients
1 slice gluten-free bread
2 tbsp lactose-free cottage cheese
½ cucumber, peeled and sliced
Lemon juice
Fresh mint
Directions
1. Lightly toast a single slice of your preferred gluten-free bread.
2. Squeeze some lemon juice onto the lactose-free cottage cheese.
3. Top your toast with the lactose-free cottage cheese.
4. Add the peeled, sliced cucumbers on top, and sprinkle with fresh mint.
