Chewy Peanut Butter Cookies

During a flare-up, you may need to avoid a longer list of foods, including fiber, dairy, spices, and acidic ingredients. These irresistible peanut butter cookies fit the bill, and they’re the perfect comfort food for any time of day.

Ingredients

1/2 cup granulated sugar
1 + 1/4 cup sifted all-purpose white flour
3/4 tsp baking soda
1/4 tsp salt
1/2 cup dairy-free margarine

1/2 cup smooth peanut butter
1/2 cup brown sugar, gently packed
1/2 tsp vanilla
1 egg

Directions

  1. Sift dry ingredients together into a bowl.
  2. In a separate bowl, cream together margarine, peanut butter, brown sugar, vanilla, and egg.
  3. Blend dry and wet ingredients together a bit at a time with a spoon or fork – or use your hands if that’s easier. Mix well.
  4. Roll batter into 1 inch balls in your hand.
  5. Place balls on a very lightly greased baking sheet, 1 inch apart (about 12 will fit on a standard baking sheet).
  6. Press each ball down half-way with a fork, leaving the imprint of the tines.
  7. Bake at 375 F for 10-12 minutes; watch for the edges to turn light brown.
    Remove carefully from baking sheet immediately and place on a cooling rack. Cookies will harden as they cool.
  8. Allow to cool for 10-15 minutes; store in an airtight container.
