Buffalo Chicken Burger Dinner

Ingredients
Ingredients for Burgers:
2 Tbsp. chopped red bell pepper
4 Tbsp. thinly sliced green onion, divided in half
1 Tbsp. unsweetened apple sauce
1/4 tsp salt
1/4 tsp crushed garlic
1/4 tsp pepper
1 lb. ground chicken (no additives)
Lettuce leaves for wrapping
Ingredients for Chili Sauce
1/2 cup tomato juice
1 tsp. each: honey, vinegar
Shake of hot sauce (optional)
1/4 tsp. each: cloves and cinnamon
1 Tbsp. butter
Directions
- Combine the bell pepper, 2 Tbsp. sliced green onions, applesauce, salt, garlic, and pepper in a large mixing bowl.
- Crumble ground chicken over above ingredients and mix well.
- Shape into four burgers.
- Broil 6 inches from the heat for about 5 to 7 minutes on each side, until juices run clear; baste occasionally with some of the Chili Sauce (recipe below).
- Wrap each in lettuce leaves, top with a spoonful of Chili Sauce and a few sliced green onions.
Instructions for the sauce: - Combine all ingredients in a small saucepan, bring to a boil.
- Simmer until sauce is reduced by half.
