Broccoli-Stuffed Baked Sweet Potato
Description
If you have a good tolerance for broccoli, then this recipe is for you. The sweet potato is baked until sticky sweet and easy to digest – perfectly nutritious for UC. Add the yummy avocado full of healthy fats, and you have a healthful and simple dish you can enjoy anytime!
Ingredients
1 medium to large sweet potato
1 cup broccoli florets
1/2 avocado
Salt and pepper to taste
Directions
1. Preheat oven to 425 degrees Fahrenheit.
2. Wrap the sweet potato in aluminum foil and place on a baking tray.
3. Bake the sweet potato until it is soft to the touch (about 45 minutes to 1 hour 30 minutes depending on the size of the sweet potato). Set aside.
4. Place the broccoli in a steamer basket and steam for about 7 minutes.
5. Slit the sweet potato in the middle.
6. Stuff the steamed broccoli inside the sweet potato.
7. Place on a dish and top with avocado, plus a dash of salt and pepper. Enjoy!
