Description

Broccoli is usually known to be "bad" or too gas-producing BUT if you just take the broccoli heads, then it's considered low FODMAP in a 3/4-1 cup serving. We all know how healthy broccoli is giving us, potassium, folate, Vitamin K, A and C. Two of these fritters would be a low FODMAP serving. They are super yummy and perfect for anyone with Colitis following a low FODMAP diet. 

For a simple low FODMAP meal, serve 2 broccoli fritters with a side of rice or quinoa and grilled fish or chicken. 

 

Ingredients

 

  • 3 cups broccoli florets
  • 1 large egg
  • 1/2 cup gluten-free flour 
  • 1/3 cup grated Parmesan cheese
  • salt and pepper, to taste
  • 1/4 teaspoon red chili flakes (optional)
  • Olive oil or garlic infused oil (even better) for frying

 

Directions

 

  1. Steam your broccoli until tender. Cool then chop it finely.
  2. In medium bowl, add egg, gluten-free flour, parmesan cheese, salt, pepper and chili flakes. Mix egg with all dry ingredients
  3. Fold broccoli into cheese/flour mixture. If you see the mixture is too dry, add a tablespoon of water.
  4. Warm a skillet over medium heat, adding a thin even layer of oil.
  5. Make 8 small patties with the mixture. Cook 3 minutes per side.
