(Apple-Banana-Coconut Oil Pancakes)

This variation of the traditional pancake is not only gluten-free but also dairy-free. It makes use of only a few ingredients you’re likely to have in your pantry. Best of all, these pancakes are light, nutritious and tasty, so you’ll want to make them over and over.

Ingredients

1 medium apple

4 medium eggs

3 bananas

1 tbsp coconut oil

Directions

1. Peel the bananas and out them in a mixing bowl. Mash the bananas with a fork.

2. Core the apple and grate it into the mixing bowl containing the banana.

3. Add the eggs into the apple-banana mixture and mix well into a batter.

4. In a frying pan, over low to medium heat, put a small amount of coconut oil.

5. With a spoon or ladle, drop some of the apple-banana pancake batter into the pan. Flatten the pancakes using the back of the spoon to make each drop thin and round.

6. Let the pancakes cook until golden brown, turn over and allow the other side to cook.

7. Remove from the pan and cook the rest of the mixture until the batter is finished. Stack the pancakes on a serving plate. Serve with your favorite syrup, honey, or fruit preserve. You can also enjoy them plain if you want a sugar-free alternative.
