Turkey Rollup With Crispbread
Description
White meat such as deli turkey, lettuce and red grapes are well-tolerated by people with Crohn’s. The rye crispbread crackers are gluten-free. Only include the light mayo if you have a good tolerance for it; else, you can substitute Greek yogurt instead.
Ingredients
2 whole lettuce leaves (preferably Romaine, butter or Boston), washed
3/4 oz turkey breast, roasted, sliced
1 tbsp light mayonnaise, divided OR Greek yogurt
2 whole rye crispbread crackers
6 pcs seedless red grapes
Directions
1. Put the washed lettuce leaves on a plate.
2. Slice the deli turkey into thin, small pieces.
3. Place some mayonnaise and turkey pieces on top of the lettuce leaves.
4. Roll up the lettuce leaves from end to end; secure with toothpick, if desired.
5. Consume the turkey roll-ups with the rye crispbread crackers and seedless grapes on the side.
