Amazing and easy to prepare, the chicken curry salad eases PCOS with high proteins and low carbohydrates. The fresh chicken curry salad for PCOS replaces seed oil mayonnaise with avocado oil mayonnaise. This means fewer carbs, less sugar, and manageable PCOS symptoms.
Avocado oil is also rich in healthy fats. This makes it easier to digest while improving reproductive health.
Ingredients
300g chicken breast.
Finely sliced lettuce.
Sliced avocado.
Diced apple.
¼ lime juice.
¼ cup avocado oil mayonnaise.
½ teaspoon of curry powder (if you prefer stronger flavors, you can include additional curry powder).
A sprinkle of salt and pepper for seasoning.
Directions
- Start by grilling or frying your chicken. When frying, it is best to use a medium such as coconut oil or almond oil in support of PCOS.
- Once the chicken is cooked and left to cool, create the dressing to add. Add your mayonnaise, the curry powder and the lemon juice (if you are not a lemon person, this step can be omitted). Flavor the wet mix with a sprinkle of salt and pepper.
- Add the lemon juice to your avocado and apple to prevent it from turning brown (this is owed to oxidization). Combine the lettuce, chicken, avocado, apple and the dressing with a light stir. Cover all the ingredients and serve in a beautiful bowl. Your chicken curry salad is now ready to eat.
