Sweet Potatoes in Ginger Syrup
Description
Both sweet potatoes and ginger provide anti-inflammatory benefits to those with Crohn’s disease. Aside from this, sweet potatoes (particularly the orange variety) are rich in manganese, potassium and vitamins. Ginger, meanwhile, is already known for its gut-soothing properties. This snack is gentle on the gut and is only lightly sweetened.
Ingredients
2 medium orange sweet potatoes, peeled and cubed
3-inch ginger, peeled and crushed
¼ cup brown or muscovado sugar
5 cups water
Directions
1. Bring water to a boil over medium heat.
2. Add the crushed ginger and sweet potatoes. Simmer for 12-15 minutes.
3. Once the water starts boiling again, add sugar and boil until sugar dissolves.
