Description
Nothing beats the succulent flavors of salmon. With its abundance of vitamins and Omega fatty acids, it is the perfect addition to the PCOS diet. Ingredients
2 freshly sourced salmon fillets of 140/150g each.
200g large potatoes.
2 tablespoons of olive oil.
1 tablespoon balsamic vinegar.
1 sprig of parsley.
Directions
- Preheat the oven to 220C / 430F.
- Line an oven dish with aluminum foil and gently place the salmon into the dish. Proceed to wash the potatoes and lay in a separate baking container. Drizzle with a single tablespoon of olive oil and roast in the oven until it turns a touch of brown.
- Add the broccoli to the potatoes and replace in the oven for an additional 10 to 15 minutes.
- Once the potatoes and the broccoli are baked, add to the salmon dish and drizzle with the vinegar and remaining olive oil. Bake for another 10 – 15 minutes
- Apply the remaining oil and return to the oven for a final 10-15 mins until the salmon is cooked. Lay the parsley over the top of the salmon. Your dish is ready to serve.
