Ingredients
4 to 6 skinless and deboned chicken breasts cut into thin strips.
2 onions peeled and diced.
1 cup broccoli.
1 thinly sliced carrot.
1 chopped green pepper.
1 clove diced garlic.
3 cups brown rice
1 tablespoon coconut oil.
Salt and pepper for seasoning.
Directions
- Start by cooking the wholegrain pasta or brown rice first.
- While the rice or pasta is boiling, pour the oil into a large pan and add your sliced chicken. Cook your chicken and then allow it to cool.
- Add the garlic, the onions, pepper, carrots, and the broccoli to a pan and proceed to sauté. Do not cook the vegetables for longer than a few minutes. This preserves the nutritional content.
- Reduce the heat to a simmer and add the chicken to the pan with vegetables. Season with salt and pepper.
- Take your brown rice or wholegrain pasta and lay on a plate. Add your chicken and vegetable mix to the rice and voila! A tasty and nutritious meal that is ready to serve up to 6 people.
