Eggs, Salmon and Avocado Brekky

Description

Featuring oily fish, salmon, that has anti-inflammatory properties, this simple and easy-to-prepare breakfast recipe is also rich in protein and healthy fats. The avocado is not only high in healthy fats (great for Crohn’s) but it is also full of B vitamins, potassium and vitamin E. It also contains digestion-friendly soluble fiber.

Ingredients

2 medium eggs

1 tsp coconut oil

2-ounce canned salmon in water, drained

1/3 avocado, cubed

Directions

1. In a bowl, break the eggs and whisk.

2. Scramble the egg mixture in coconut oil over medium heat.

3. Transfer scrambled eggs onto a serving plate, then top with salmon and avocado cubes. Enjoy!
