Perfect Chickpea Pasta and Shrimp

Description

If you love pasta, but PCOS prevents you from consuming starch, this recipe is just for you! Chickpea pasta is high in fiber and antioxidants helping fight inflammation. Ingredients

1 box of chickpea pasta. 

1 lb of shrimp. 

1 bunch of chopped broccoli. 

1 cup baby tomatoes. 

1/2 cup fresh basil or parsley. 

1/2 lemon freshly squeezed. 

1 clove fresh, chopped garlic. 

1 tbs olive oil. 

1/4 cup chopped walnuts 

Salt and pepper for seasoning. 

Directions

1. You will need a large pot half-filled with water. 

2. Add the salt and the pepper to the water when starting to boil. 

3. Once you have brought the water to the boil, it is time to add the chickpea pasta. The pasta must be cooked for a minimum of 5 minutes. You can include the broccoli and continue to boil with the pasta until it becomes al dente. 

4. Remove the pasta and the broccoli by placing it in a strainer. Only leave a half cup of water in the pot. Use the remaining pasta water to prepare the shrimp. 

5. Allow the remaining pasta water to simmer. Then add the shrimp with the freshly chopped garlic. Drizzle the olive oil over the shrimp and continue to cook until it turns pink in color. This should take 5 minutes. 

6. Reduce the heat at this stage and place the cooked pasta and the broccoli into the pot containing the shrimp. 

7. Include the baby tomatoes and a squeeze of the lemon juice to the pasta and shrimp mix. 

8. Remove the pot from the stovetop and toss all the ingredients to coat with the seasoning. 

9. Add salt and pepper, the fresh basil or parsley and sprinkle the chopped walnuts over the dish. 

You can remove the walnuts from the dish if not preferred.
